ALABAMA BISCUITS SUPREME


ALABAMA BISCUITS SUPREME
- Two (2) cups of bread flour
- Four (4) teaspoons of baking powder
- Two (2) teaspoons of sugar
- Quarter (1/4) teaspoon of salt
- Half (1/2) teaspoon of cream of tartar
- Half (1/2) teaspoon of baking soda
- Half (1/2) cup of sweet butter
- Three Quarter (3/4) cup of lard
- Half (1/2) cup of evaporated milk
- Half (1/2) cup of buttermilk

ALABAMA BISCUITS SUPREME PREPARATION:
Sift dry ingredients into bowl.Cut in butter and lard until coarse crumbs. Make a well; add evaporated milk and buttermilk all at once. Stir quickly with fork just till dough follows fork around bowl. Turn onto lightly flowered surface (dough should be soft). Knead gently 10 to 12 strokes. Roll out dough 1/2 inch thick. Dip cutter in flour, cut dough straight down. No twisting.Bake on un-greased baking sheet in very hot oven, 425 to 450 degrees for 10 to 12 minutes.For cheese biscuits, add 1 cup grated sharp cheddar cheese along with evaporated milk and buttermilk.
